Cooking and Trying Too Hard

Score one for nausea and zero for productivity this week! I have been sick to my stomach off and on since last Saturday. It’s been a downer after feeling so good for a month or two!

Enter my meal plan for the week:

chicken corn chowder

Tuesday’s last-minute switch, chicken corn chowder: FAIL. Too much corn, not enough chicken.

Wednesday’s beef fajitas: FAIL. I ran out of time and made turkey dogs and whole-wheat mac ‘n’ cheese instead. (At least I tried to be a little healthy about it. Ha.)

Thursday’s Italian chicken with chickpeas: FAIL. I was not waiting till 5:30 pm so I could chop and saute things. I threw chicken, spices, and salsa in the crock pot to serve on tortillas.

And the moral of the story? I’m too ambitious sometimes! Trying new and time-consuming meals can be fun, but I’m nearing the third trimester and I need to think more simply. (And use my crock pot more… it’s way too hot to use the oven!)

Next week, I’m thinking of meals like chicken with couscous, stir fry, meat and potatoes… quick and basic!

What are your go-to easy (+ frugal and healthy) meals?

I hate it when meals flop, but it happens to us all. Boo.
We love stir-fry here, it’s quick and easy and can be changed up. Love (ground) beef stroganoff on either rice or egg noodles. I have a honey dijon chicken recipe for the crock that’s yummy, I serve it with potatoes and green beans. Salads are great for summer! We eat a lot of them, including taco salad which you can make with whatever is in the pantry (spanish rice, black beans, corn,) garnish it with lettuce, tomato and avocado. It changes things up. BLT’s are an easy favorite. I use turkey bacon instead of pork a lot of times, because it’s cheaper. Also, chicken club sandwiches. I take one chicken breast, grill it (or pan fry it in a little olive oil ) cut it in half length wise (for both of us), and use cheese, mayo, lettuce, tomato, avocado and bacon (again, mostly turkey).

My Hubby doesn’t like a lot of “hot” foods during the hot summer months, mostly because he works outside a lot, so we end up eating a lot of sandwiches, salads, and grilled food.

I usually keep a tub of cut up fruit in the fridge, too. Whatever is in season and on sale. Lately it’s been strawberries, pineapples, blueberries, and peaches. It makes a great snack, and dessert for after supper (top it with a little whipped cream and slivered almonds!). I’m all about easy!

Mmm, thanks for all the suggestions! I like the crock pot honey dijon chicken idea. I may try that next week.

So sorry your nausea has come back! I have found that this is a time in life where sometimes I am cooking great meals and on top of most things…and sometimes I am cooking not-so-good meals and am hardly keeping up with anything.

That is SO true for me too!

Oh goodness–so sorry about the yuckiness. :( I’m nearing the 3rd trimester and praying I feel even just a bit as good as I do now when the time comes. The 1st trimester was awful, and I totally understand the need for changed plans and simple!
But they definitely aren’t FAILS–I’m totally craving turkey dogs and mac n cheese now, lol.

Like LeAnna, we do lots of salads, soup and sandwiches for simple. As long as the AC is cranking, we don’t mind soup in the summer. :) Sandwiches are a favorte–we just mix it up with different breads (we loooove ciabatta) or meats (substitue deli meat with chicken breasts, turkey bacon, etc).

I admire your ambition, and it’s okay to be adventurous! Don’t be too hard on yourself when it doesn’t work out though–you’re making a little life! Sometimes God has to MAKE us keep it simple and put our feet up. :)

Sometimes I feel like food is the one area of homemaking I really excel at. I think it’s because it’s the only one I really enjoy participating in.

That being said, I have a few recipes for different ways to prepare roasts that I really love. They’re a spicy, chipotle pork, and a spicy barbacoa beef roast recipe. And, they’re both crock-pot appropriate.

And if ya’ll are into casseroles, I have a ton of casserole recipes. I’m very thankful that my husband loves them.
